When it comes to brewing coffee at home there are many different brewing devices and methods to choose from. At St Dreux the Clever Coffee Dripper is one of our all-time favourites.
There are four main considerations when choosing a coffee brewer for home, price, convenience, quality & repeatability, and this ticks all the boxes.
The Clever Dripper has a patented valve allowing you to steep your favourite coffee before placing it on your mug, which opens the valve allowing the brewed coffee to pour through the paper filter and into your mug.
This process gives you complete control over every variable. Water, temperature, coffee dose, grind setting and steep time making it easy to replicate great results.
Here is a simple guide to getting the best out of the Clever Dripper.
FILTER
Not all filter papers are made equal. Size 4 Moccamaster filter papers are best for producing clarity. Make sure to rinse with hot water to remove any small particles that might produce a papery flavour in your brewed coffee.
COFFEE
Always make sure you’re using fresh coffee otherwise you might miss out on some of the aromatics that make it so vibrant and enjoyable.
Grind on a medium to coarse setting or if you’re buying pre-ground simply ask for it to be ground for the Clever Coffee Dripper. Grinding fresh is always preferred due to the speed in which ground coffee ages.
WATER
Filtered water is best for coffee brewing, for extraction, texture, and flavour.
TEMPERATURE
Temperature is important for getting the right extraction, too low and it can be too sour and watery, too high and it can become bitter and dry.
TIME
How long you allow the coffee to steep will also affect extraction. Leave it for too long and it can become bitter and dry, don’t leave it long enough and it can become weak and sour.
The time it takes your brewed coffee to draw down can be a good indication of grind setting. If it draws down too fast you might be grinding too coarse, too slow and you might be grinding too fine.
METHOD
- Place filter paper in brewer and rinse.
- Pour 30g of ground coffee in brewer.
- Start timer and pour 500g of water at 93c over coffee.
- After 2 minutes of steeping place brewer on carafe or mug.
- Draw down should take 1:30 minutes,
